Lamb Shanks Our grass-fed Lamb shanks, often referred to as Osso Buco found in traditional Italian cuisine, is a cross-slice of the lower leg which includes the marrow bone with meat all around it. They are cut around 8” and are an excellent choice for slow cooking and making a rich sauce at the same time.
Add some short ribs, chopped celery, carrot and gremolata (gremolada is a chopped herb condiment typically made of lemon zest, garlic, and parsley)to the crock and you’re all set for a hearty meal packed with healthy Omega 3s.
