“Beef Shanks”, “Marrow Bones”, or “Cut Shanks with Meat”, (2 in thick). Some call them “meaty bones” and they are also referred to as “Osso Buco”, in the Italian traditional cuisine. We call them “shanks with meat”. In any case, they are great as a slow cooked, syrupy delight.
Our grass-fed beef shanks are a cross-slice of the foreleg, which include the marrow bone with meat. These are an excellent choice for slow cooking and make a rich beef stock at the same time. Add some stew meat, chopped celery, carrot and gremolata (gremolata is a chopped herb condiment typically made of lemon zest, garlic, and parsley) to the crock and you’re all set for a hearty meal, packed with healthy Omega 3s.
